Executive Chef DAVID ŠAŠEK
David works in CODA restaurant / ARIA hotel since 2004. Before he came to Coda he worked in Ireland in 5 star hotel BALLYNAHINCH CASTLE. He also has working experience from some of the best Prague restaurants as Cafe and Brasserie Le Patio, where he worked under his friend today Zdeněk Polreich (Palace, Savoy, Moevenpick etc.)
Chef Šašek´s menu is steeped in the classic French technique “Sous Vide”. It’s an “under vacuum” method of cooking that is intended to maintain the integrity of ingredients by heating them for an extended period of time at relatively low temperatures, sometimes well over 24 hours.
This delicate preparation results in the most tender and flavourful taste combinations in which the molecular structure of the foods remains undamaged during the cooking process.
